We wanted a method anyone could repeat at home — not a chef's secret, but a household ritual. Water is the most transparent medium we know.

The Clean Process

Rinse

Briefly rinse the portion under cool running water.

Pat dry. No soaking.

Submerge

Place beef in a pot; cover with cold water by two fingers.

Room to move. Nothing crowded.

Quiet heat

Bring to the gentlest simmer — never a rolling boil.

Turn off heat; lid on; rest until just cooked through.
